Linguine in saor

For this dish, we were inspired by a classic of the Venetian tradition, sardines in saor. Tasty with just a touch of sweetness.

  • 220g Linguine N° 10 Agnesi
  • 50g raisins
  • 6 anchovies
  • 50g pine nuts
  • 30g onion
  • 1 bay leaf
  • 3 tbsp. vegetable stock
  • extra virgin olive oil
  • seed oil for frying
  • salt
  • flour


  1. Flour and fry the anchovies. Toast the pine nuts separately.
  2. Add the oil, bay leaf and the onion, chopped into rings, to the pan.
  3. Brown then add the raisins and the vegetable stock, seasoning with salt.
  4. Remove the bay leaf and add the fried anchovies, crushing them slightly with a spoon. Add the pine nuts and mix all the ingredients.
  5. Cook the Linguine for 7 minutes then sauté in the pan with the rest of the ingredients.
  6. Plate the dish and add a few fried anchovies on top as garnish.
